2018 Pastry Studio Demos

Hands-on educational demos will take place at the Pastry Studio at the Midwest Foodservice Expo on Monday, March 12th, Tuesday, March 13th, and Wednesday, March 14th.   There will be space for up to 32 show attendees to participate.   Spaces are filled on a first-come, first-served basis and fill up quickly!

Here is the 2018 Pastry Studio Schedule:

Monday, March 12th

11:30-12:15 PM  Chef Julia Steinhiser, FVTC
Topic:  The Perfect Petit Four

12:30-2:00 PM Set up for sampling in the Pastry Studio will begin at 12:30 PM for the Cheese Head Cheese Bread Challenge.  Sampling will begin at 1:00 PM in the Pastry Studio and will continue until 2:00 PM or samples run out.                

2:30-3:15 PM   Franci Hencke, FVTC
Topic:  The Magic of Macarons                

Tuesday, March 13th

11:30-1:30 PM Student Pro-Start Demos led by Cheryl Miranda, MATC Milwaukee

Topic:  Baking pretzels, pretzel rolls and buns

3:00-3:45 PM Geoffrey Cooper, Little Bakers Association
Topic:  Learn how to make gluten-free cookies that don't taste gluten-free

Wednesday, March 14th

  Topic:  St. Patricks Day Cookie Hookie - Learn how to decorate shortbread cut out cookies with royal icing!

12:30-1:15 PM Rachel Rick, Pastry Chef SURG Restaurant Group and Katie O'Neil, Pastry Sous Chef SURG Restaurant Group 
   Topic:  Watch and learn how to make a classically delicious gluten free apple pie topped with a gluten free cinnamon streusel
and gluten free chicken and sweet potato empanadas!  This demo is not hands-on however, samples will be provided!
